You probably know this already but in case you don't, we put some fresh eggs in the container with the whites for about three days (before we made truffle butter with them).  The aroma and flavor completely permeated the eggs and the resultant omelette was the best we have ever eaten. Bon Appetite,

My co-presenter, Daniele Mazet-Delpeuch (former private chef to President Mitterand of France, and famed Perigord foie gras maker and truffle grower . . .decided to offer a hierarchy of butters: plain butter, commercial truffle butter, then the Oregon White Truffle butter. She decided the (Oregon) Black Truffle butter should be served on hot pasta. The OWT butter was delicious . . .full-bodied . . .the OBT butter was also delicious on the pasta . . . definite fruity overtones on the nose.

The commercial truffle butter worked really well: it illustrated my "all oils are artificial" point beautifully. Incredibly strong but simple truffle flavour . . . It might have been stronger on the nose, but it was *terrible* by comparison with the real thing. . . Thanks again for all your help. It was really appreciated - not least by the attendees at the workshop, who really enjoyed their taste of Oregon.
